Com el producte no es bull en aigua, sin\u00f3 que es cuina dins de l'embalatge, els components que donen el sabor a la verdura no es perden en l'aigua de cocci\u00f3.<\/p><p class=\" translation-block\">\u00b7 Els minerals i vitamines es mantenen en un percentatge m\u00e9s elevat que en coccions amb aigua. No migren en l'aigua de cocci\u00f3.<\/p><p class=\" translation-block\">\u00b7 D'altra banda, la degradaci\u00f3 de les vitamines \u00e9s menor que a altres temperatures m\u00e9s elevades. Cuinem amb temperatura inferior a 100 graus. Aix\u00ed aconseguim que els components dels aliments m\u00e9s sensibles a la temperatura, es degradin menys, i aix\u00ed els producte conserven m\u00e9s vitamines, minerals, sabor\u2026<\/p><h2 class=\"wp-block-heading\" id=\"beneficios-con-respaldo-cientifico\">Beneficis amb suport cient\u00edfic<\/h2><p class=\" translation-block\">S'han realitzat estudis com el de <em><a href=\"https:\/\/www.researchgate.net\/publication\/314160508_Nutritional_advantages_of_sous-vide_cooking_compared_to_boiling_on_cereals_and_legumes_Determination_of_ashes_and_metals_content_in_ready-to-eat_products\" target=\"_self\">Mariangela R, Maria D, Silvia M et al<\/a><\/em>  en el qual es va demostrar que el contingut en minerals en verdures, cereals i llegums cuinats al buit, era superior.<\/p><p class=\" translation-block\">En l'estudi, es comparava el\u00a0sous-vide\u00a0amb l'ebullici\u00f3. Van concloure que els productes mantenen m\u00e9s el seu valor nutricional, a m\u00e9s de mantenir m\u00e9s sabors i aromes.
