Avui t\u2019explicarem una de les maneres m\u00e9s eficients per a aconseguir que tots els menjars que prepares, es conservin millor i durant m\u00e9s dies en condicions \u00f2ptimes.\u00a0<\/strong><\/p>\n<p>Per  a comen\u00e7ar cal situar-te en context: un aliment, mentre est\u00e0 entre 10\u00baC i 65\u00baC, es troba en la temperatura id\u00f2nia per a afavorir el desenvolupament de tota mena de bact\u00e8ries, fongs... En aquesta franja de temperatura, <em>la vida flueix i s\u2019escampa a caprici.<\/em><\/p>\n<p>El menjar r\u00e0pidament ha de passar de 65\u00ba a menys de 10\u00ba en un interval m\u00e0xim de 2 hores segons la legislaci\u00f3 vigent. Per aquest motiu <strong>les cuines professionals o industrials, disposen d\u2019abatedors de temperatura<\/strong> que, de fet, no deixen de ser unes neveres de m\u00e9s o menys capacitat, equipades amb una sonda que es punxa a l\u2019aliment per a controlar la seva temperatura interior. Aix\u00f2 fa que, mentrestant la sonda no detecta que l\u2019aliment ha assolit la temperatura desitjada (sempre inferior a 10\u00baC), <strong>la generaci\u00f3 d\u2019aire fred es produeix a un r\u00e8gim molt alt, molt superior al d\u2019un frigor\u00edfic convencional.
